We celebrated Jr.’s 16th birthday this evening. While we let that stunning fact sink in, we dined on his requested birthday meal of ravioli, salad, bread, and cheesecake. The bulk of the meal cooked itself–thank goodness for Costco. Tomorrow, though, it’s back to the trenches cooking from scratch. I made the last-minute decision to join Dinner: A Love Story’s (DALS) “Seven Days, Seven Meals” challenge to try and vault myself out of a cooking rut. Following the guidelines in this post I’ve attempted to craft a meal plan for the week that introduces us to a few new meals. I’m already bracing myself for the picky eater groans.
Sunday: Meal already listed above–doesn’t fit any of the challenge categories, but it’s what the birthday boy chose
Monday: Rustic Chickpea Stew w/ Brown Rice (Simple Bites)
Tuesday: Tacos w/ Veggie Lime Rice (Martha Stewart & Veggie 101)
Wednesday: Cheesy Rice and Beans (from Parents Need to Eat Too) and salad
Thursday: Twice-Baked Potatoes (DALS) and broccoli slaw (?)
Friday: A variation of Stuffed Shells from Make Ahead Meals Made Healthy
Saturday: Popcorn and PB/Applesauce on Toast (our ultimate “security blanket” meal)
