Yesterday I made a double batch of bean enchiladas. One for dinner, one for the freezer.
These lovelies were to be our feast after 20 minutes of baking that evening. I set the rice cooker for a delayed start and we headed out to pick blackberries.
3 hours later, blackberries picked, in juice- and grass-stained clothing we went out for Chinese food. Frugal? No. Necessary? Probably not. All I felt like doing at the time? Completely.
The best part? I don’t have to cook dinner tonight.
