Homemade noodles—from Deborah Madison’s Vegetarian Cooking for Everyone with pesto from Lunch Lessons by Ann Cooper and Lisa Holmes. We substituted walnuts for pine nuts in the pesto; the basil was from our garden!
Surprisingly, the noodles received rave reviews from all three kids. Well, Spud didn’t really say anything, but he ate his whole helping and more from Cowboy’s plate later. Cowboy is a noodle-hater and good-naturedly endured his meal.
